Shayda’s Orange Apple Cranberry Granola

DESCRIPTION:

With apples being in season right now, my mom asked me to create a granola recipe using them. So this is how this recipe came about. It’s super easy to make and totally addicting! It’s full of flavor, crunch and free of any added sugars. This granola is made with delicious wholesome ingredients. It’s naturally sweetened with bananas, golden raisins and apples. I did not use any oil as most granola recipe use. Great for topping dairy free yogurt, as a cereal replacement with almond milk, or snacking on as-is. It’s gluten free and absolutely delicious!

INGREDIENTS:

6 cups gluten free rolled oats
10 really ripe bananas, large/med size
6 cups of chopped apples (3 Granny Smith/3 Pink Lady apples)
1 1/2 cups chopped pecans or any nut of your choice (you can also leave them out)
The zest of 3 large oranges
6 Tablespoons of fresh orange juice
1 Teaspoon vanilla
1 Teaspoon Cinnamon
2 Teaspoon Apple Pie Spice
2 cups of dried cranberries
1 cup golden raisins

PREPARATION:

1-In a large bowl, mash all the bananas so that there’s no lump.
2-Using a microplane or a zester, zest all the oranges and add to the bowl. Mix well.
3-Add the orange juice, mix well.
4-Add all your spices, mix well.
5-Add the raisins, cranberries and pecans. Mix well.
6-Add the rolled oats, and mix until evenly mixed.
7-Spread the mixture out on a teflex sheet on a dehydrator tray and dehydrate at 135 for about 12 hours. After 12 hours flip the granola so that the mixture is now on the mesh tray. Make sure to brake it up into bite size pieces, and dehydrate for another 12 hours or until the desired crunch is achieved. (For me 24 hours is perfect)
8-Store in an airtight container or freezer bag to preserve freshness. Enjoy!
